Preparing the Rica-rica Seasoning

Ginger 125.0 g

Lemongrass 300.0 g

Lime Leaves 5.0 pc

Knorr Chicken Powder 1kg 10.0 g

Gurame Fish 1000.0 g

Cooking Oil 500.0 ml
Preparation

Preparing the Spice Mix
- Coarsely grind the shallots, garlic, red chillies and cayenne pepper.

Preparing the Rica-rica Seasoning
- Sauté the ginger, lemongrass, lime leaves, galangal, Knorr Chicken Powder, sugar and oil.
- Add the spice mix and continue cooking.
- Add basil and water to taste.
- Simmer over low heat until fully cooked.

Preparing Gurame Rica-rica
- Fried the gurame until cooked, then add the rica-rica seasoning.
- Continue cooking over a low heat until the seasoning has seeped into the fish.
- Plate and serve.
