Preparation

  1. Sambal Ganja

    • Prepare the Ingredients: Thinly slice all the ingredients for the ganja sambal: shrimp, water starfruit, red bird's eye chili, shallots, large red chili, lemongrass, and kaffir lime leaves.
    • Sauté: Heat a little oil in a pan, then sauté all the sliced ingredients until fragrant and cooked.
    • Blender: After sautéing, put all the ingredients into the blender. Blend until all the ingredients are smooth and the texture is even.
    • Re-cook: Re-cook the blended sambal over low heat. This aims to make the sambal last longer and not spoil easily.
    • Taste Adjustment: Taste and adjust the flavor by adding sugar, chicken broth powder, and salt to taste.
  2. Mie Lidi Batak

    • Boil Water: Prepare a large pot filled with water, then add salt. Cook until the water boils.
    • Boil Noodles: Add Batak noodles into boiling water. Stir gently and cook for about 5 minutes over medium heat until the noodles are soft.
    • Drain & Coat with Oil: Lift the vermicelli and drain until the water reduces. Transfer to another container, then drizzle with a little cold cooking oil so that the noodles do not stick to each other.
    • Cool & Store: Let sit for 5 minutes, then stir gently. Wait until the noodles are cool before storing.
  3. Aceh Ganja Noodles (1 serving)

    • Heat the Pan: Heat the pan or wok until it smokes lightly.
    • Stir-Fried Seafood: Add cooking oil to the pan, wait until it is hot. Reduce the heat, then add the peeled small shrimp and sliced squid. Cook until half done.
    • Add Noodles: Add the boiled Batak thin noodles to the pan. Stir well.
    • Season: Add hemp chili sauce and celery leaves. Sauté again until all ingredients are well mixed and fragrant.
    • Add Water & Seasoning: Add mineral water, stir until boiling. Then add chicken broth powder and MSG. Taste and adjust the flavor.
    • Add Eggs: Pour beaten chicken eggs into the noodles, stir thoroughly until the eggs are cooked and mixed with the noodles. Ensure the taste is delicious and fragrant.
  4. Complement

    • Grilled Shrimp: Grill or roast the whole windu shrimp until cooked.
    • Fried Egg: Fry the fried egg to your liking.
    • Use opak crackers as a complement to Fried Noodles.
