  • Chicken Stock 50.0 ml
  • Medan Anchovy 30.0 g
  • Shrimp crackers 50.0 g
  • Butter 30.0 g
  • lemon basil 5.0 g
  • Parsley 5.0 g

Snapper served with anchovy sambal and pasta is a personal favorite for its quick preparation and satisfyingly bold flavor. This dish draws inspiration from the garlicky spice of aglio e olio and the savory punch of anchovy as a replament of anchovies with sambal bawang.

Preparation

  1. Sambal Bawang

    • Crush garlic, shallot, chili, and lime leaves altogether.
    • Heat oil, untill it very hot. Once it's hot, add crushed garlic and cook while letting the oil infused with garlic.
    • Once it's infused, add shallot and chili mixture. Let it cooked slowly untill the shallot is ready. Then, add Knorr Lime Powder and set it aside.
  2. Snapper

    • Marinate the fish with Royco Bumbu Kuning, then cook it in a pan by pan seared method. Once done, let it rest
    • Plate and garnish with lemon basil and koya
  3. Pasta

    • Heat the pan, then add chopped gralic. Once it's cooked,glaze it with chicken stock.
    • Add boiled pasta and toast it with sambal
    • Remove pasta from heat, and glaze it with butter. Then add Medan anchovy and check the seasoning.
