Making the sweet purple potatoes filling

  • Sweet Purple Potato (mashed) 1000.0 g
  • Sugar 150.0 g

Making the durian filling

  • Durian (without the seed) 1000.0 g
  • Sugar 75.0 g
  • Fresh Cream 25.0 g

Making the bolen

  • Plain Flour/ All-purpose Flour 1000.0 g
  • Sugar 100.0 g
  • Salt 20.0 g
  • Cake Margarine 150.0 g
  • Cold Water 350.0 ml
  • Eggs (2pcs) 100.0 g
  • Pastry Fat Shortening 250.0 g
  1. Making the sweet purple potatoes filling

    1. Mash the cooked sweet purple potatoes.
    2. Cook with small fire until it’s getting solid and leave it for while.
  2. Making the durian filling

    Cook the durian with sugar and fresh cream until they’re getting solid and leave it for a while.
  3. Making the bolen

    1. Mix all dry ingredients and add some water, eggs, and margarine. Mix them well until halfly smooth.
    2. Form it into a ball and leave it for 10 minutes.
    3. Roll the dough longwise and smear pastry fat shortening that has been mixed with margarine. Fold the dough with single fold.
    4. Leave it for 20 minutes, do the previous steps for 3 times single fold.
    5. Press the dough and fill with sweet purple potatoes and durian filling. Then, roll the dough.
    6. Row the dough into baking dish and smear with egg yolk.
  4. Baking the bolen

    Bake the bolen at 200oC until it’s ready to serve.
