Grilled Sauce for Squid

Fried rice

  • Cooking Oil 100.0 g
  • Eggs 200.0 g
  • Red sauce 300.0 g
  • Shredded smoked skipjack tuna 200.0 g
  • White Rice 1000.0 kg
  • Chives 50.0 g

Nasi Goreng Eja, or red fried rice in the Makassarese language, is cooked using smoked skipjack tuna (ikan cakalang asap). In its developed version, it is served with grilled squid stuffed with seasoned mashed white tofu

Preparation

  1. Red Sauce

    • Cook shallots and garlic, then put shredded chilli, lemongrass, bay leaves, and lime leaves, cook until done
    • Combine mashed tomato, ground pepper, Knorr Rostip, and cook until done and thickens
  2. Squid Filling

    • Mash tofu and add egg, tapioca flour, and Royco Ayam. Mix it well and fill it in the squid
    • Close the squid and its filling, and use satay to skewer it, then steam it for 10 minutes. Then, chill it and grilled it with the toppings.
  3. Grilled Sauce for Squid

    • Heat the margarine until melted, then put in the red sauce, Kecap Manis Bango, and Knorr Oyster
    • Once all combined, applied it on the squid
  4. Fried rice

    • Heat the Wok, put oil, add egg, and then rice until all combined
    • Add red rice, skipjack tuna, chives, and combined well
