Making Surabaya Layer Cake

  • Eggs 100.0 g
  • Egg Yolk 600.0 g
  • Stabilizer 12.0 g
  • Medium Protein Flour 145.0 g
  • Starch, Corn (Maizena) 20.0 g
  • Cake Margarine 390.0 g
  • Sugar 280.0 g
  1. Making Surabaya Layer Cake

    • Whisk the eggs, sugar, and stabilizer until they expand.
    • Add the sieved flour, Maizena and mix them well.
    • Then, add the melted/whisked margarine and mix them well. Divide the dough into 3.
    • Give the first dough with chocolate paste, 10 g chocolate powder and let the rest stand on their yellow colour and move into a baking pan of 24x24x4 cm.
    • Bake the dough in the oven at 180⁰ C for about 30 minutes.
